Hook, Line & Sinker In-Flight Catering is a small, privately run business servicing private aircraft passing through St.Thomas, U.S. Virgin Islands.

Owners Ted and Becky Luscz handle each order personally and with great care. To best serve their clients, they require 24 hours notice on most orders. In addition to this menu, any special order will be accommodated.

Please keep in mind that St. Thomas is a small island and availability of some speciality items may be limited.

Payment and arrangements may be made through the F.B.O. handling your aircraft.


Continental Breakfast
A complete boxed breakfast including muffin or Danish pastry, bagel or croissant, fruit cup, cheese or yogurt, condiments and orange juice.

Lox & Bagels
An assortment of bagels with smoked salmon, cream cheese, chopped onions, capers, lettuce & tomatoes.

Croissant Sandwich
Fresh croissant with fried egg, cheese, bacon or sausage. Served with home fried potatoes and fruit cup.

Omelet of your Choice
A fluffy 3-egg omelet with your choice of ingredients, accompanied by home fried potatoes, fruit cup, and toasted English muffin.

French Toast
Thick slices of egg bread dipped in a Grand Marnier & cinnamon batter and grilled, served with sausage or bacon, butter & syrup and fruit cup


Caesar Salad
A traditional Caesar salad with shredded romaine, shredded Parmesan cheese, fresh croutons and Caesar dressing

Greek Salad
Romaine, tomatoes, green peppers, kalamata olives, red onion & feta cheese

Spinach Salad
Fresh baby spinach with crumbled bacon, blue cheese, mushrooms, roasted red peppers , red onion and walnuts

Salads may be packaged in individual salad bowls or in bulk.

Grilled Chicken or Shrimp may be added to any salad


Sliced Fruit
An arrangement of available sliced fruit, usually including melons, pineapple, papayas and strawberries. These are the only fruits permitted on pre-cleared flights heading to the U.S. Other fruits may be included on flights which are not pre-clearing for entry to the U.S. or for flights going to other destinations.

Crudite & Dip
A tray of julienned and sliced fresh vegetables with ranch or blue cheese dip

Cheese & Crackers
An assortment of wedged and sliced domestic and imported cheeses and gourmet crackers.

Shrimp Cocktail
Jumbo boiled shrimp with spicy cocktail sauce. Platter includes 5 shrimp per person. Garnished with fresh lemon wedges.

Seafood Platter
A selection of cold seafood which may include Caribbean lobster, boiled or grilled shrimp, scallops, smoked salmon and grilled tuna. Served with complementary dipping sauces.

Deli Sandwich Basket
A selection of deli sandwiches (1.5 sandwich per person) on assorted rolls, croissants, and sliced breads, accompanied by condiments and cornichons.

Finger Sandwiches
A tray of assorted miniature sandwiches with turkey, ham, roast beef, egg salad, tuna salad, chicken salad, salmon & cream cheese.

Deli Platter
A selection of sliced deli meats and grilled chicken, sliced cheeses, lettuce and tomatoes, accompanied by a basket of assorted breads and rolls, and condiments

Cold Meat, Fish or Poultry Platters
Sliced Filet Mignon or Roast Pork, Tuna, Grilled Chicken or Roast Turkey arranged on a platter and served with garnish and complementary sauces, rolls & butter

Box Lunches
A large deli sandwich on fresh roll or wrap with fruit cup, coleslaw, chips, cornichons, condiments, fresh baked cookie and mints. Sandwich choices may include turkey, honey ham, roast beef, grilled chicken, tuna salad, or chicken salad or selection of your choice.

A variety of dinners may be prepared using either filet mignon, boneless chicken, tuna, salmon or pork tenderloin, served with a complementary sauce, rice , potato or pasta and vegetables

Cookie & Brownie Tray
Assorted freshly baked cookies and brownies.

Our pastry chef can create the dessert of your choice or a sampling of mini desserts. Not available with short notice, however.

A full line of beer, wine, liquor and soft drinks are available. Substitutions may be necessary if special wine choices are not available.
